Roasted organic pasture-raised beef topside with Thermenregion red wine jus, tender young green beans wrapped in cold-smoked Austrian Speck bacon, served with a truffled potato and organic Alpine cheese souffle (served pink, gluten free)
A duet of cuts from young roasted organic heritage-breed pork, served with Thermenregion Riesling-braised cabbage, and potato dauphinois
Wild organic Wienerwald forest mushrooms in a thyme and cream sauce, with traditional Austrian spinach and bread dumplings

A curated drinks menu of locally sourced wines from the region, specially-brewed organic Carinthian natural craft beers on draft, and a selection of classic Austrian sodas will be served
For our youngest guests aged 10 and under, we are pleased to offer a delightful Spaghetti Bolognese, lovingly chosen for us by the most opinionated kids we know! (This dish is also available to older guests upon request)
